A few simple ingredients is all you need to impress your friends with this grilled Mexican street corn recipe. Don't forget the lime!

Yields 4 servings
¼ cup + 1 tablespoon olive oil, divided
1½ tablespoons Fire & Flavor Salmon Rub
1 teaspoon grated lime zest
1 teaspoon granulated sugar
½ teaspoon kosher salt
6 ears corn, husk and silk removed
1/3 cup finely crumbled feta or cotija cheese
2 tablespoons chopped cilantro
Lime wedges for serving
FIRST Brush corn with 1 tablespoon of olive oil and set aside. Preheat HERO Grill according to package directions. Grill corn, turning often, until slightly charred all over, about 12 minutes.
NEXT While corn is grilling, combine remaining ¼ cup olive oil with Salmon Rub, lime zest, sugar, and salt.
LAST Brush grilled corn with oil mixture. On cutting board, toss cheese and cilantro together and roll each ear in mixture until coated; serve immediately with lime wedges.
